㈠ 關於雞蛋的美食做法
蛤蜊燉蛋
主料:
蛤蜊500克 雞蛋2個或3個
輔料:
水是雞蛋液的2倍 蔥花少許
鹽適量 蚝油適量
芝麻油少許 姜絲少許
生抽適量
做法：
1. 蛤蜊先吐沙後清洗干凈，然後鍋內放入姜絲燒開水，放入蛤蜊煮至殼張開即可關火撈出，再放入水中淘干凈，煮蛤蜊的水不要倒掉，把上面漂的一層水沫撈出撇除備用
2. 根據燉蛋的盤子大小決定雞蛋個數，打入兩個雞蛋或者三個雞蛋，我這是雙黃蛋，因為盤子不大，就用了2個雙黃蛋，相當於三個雞蛋的重量
3. 先筷子或手動打蛋器攪拌勻，成雞蛋液即可，也把蛋液可以過篩，我一般不過篩，蛋液能攪拌均勻就行了
4. 乘著鍋里煮蛤蜊的水沒有涼在半溫狀態，舀是蛋液的兩倍蛤蜊煮水倒入空碗中，把碗里加入適量的鹽，用手持打蛋器或筷子把鹽攪化。注意水一定要是蛋液的1.5至2倍，個人感覺2倍最好，口感又滑嫩，水少水多都會影響燉蛋的口感
5. 把剛才攪勻的蛤蜊鹽水稍微涼一些倒入雞蛋液里混合後順著一個方向再次攪勻
6. 准備一個漂亮的淺盤子，把蛤蜊圍著盤子四圈擺好，盡量挑選張口一樣大小的蛤蜊，每個蛤蜊扇貝裡面放兩塊蛤蜊肉，多餘下來的蛤蜊肉可以剁碎鋪在盤底，也可以不用。如果是深的盤子，為了美觀，可以不要急著放蛤蜊，先在盤子里倒入一半蛋液，上鍋蒸熟後再擺好蛤蜊然後倒入剩下的蛋液繼續蒸，不過深的盤子時間適當放長一些，一般8至10分鍾左右
7. 在盤子裡面倒入蛋液，蛋液在盤中的三分之二處即可然後放入有水的蒸鍋里
8. 盤子上面蓋上一個干凈無水的盤子，也可以用保鮮膜代替，這一步很重要，如果不蓋，蛋液在蒸的過程中會被鍋蓋上掉下來的水蒸氣燙成很多蜂窩孔，然後開大火蒸5分鍾
9. 因為是淺的開口大的盤子，所以一般蒸不到5分鍾基本可熟了。當然沒有淺的盤子也可以用深的盤子，但是蒸蛋時間要長兩倍才能蒸熟，蒸蛋時間如果過長也會影響蛋的口感
10. 重口味的人可以加點專門用來涼拌的生抽、麻油、蔥花等，一般孩子不太喜歡蔥花、生抽之類的，可以不加，我個人喜好不加生抽蚝油麻油之類的，感覺加了生抽之類的調味料會很難吃出仙貝的鮮味。
小貼士
1、注意把握好水和蛋的比例，水是蛋的1.5至2倍，個人感覺2倍最好
2、蒸蛋之前，上面要蓋盤子或保鮮膜，防止蜂窩孔
